Some dips ask you to babysit them; this one just asks for a bag of chips. Built on a jar of Mateo's Queso Blanco, it comes together in about 20 minutes — savory breakfast sausage browned and folded into melty queso and cream cheese, with a spoonful of salsa for depth and a scatter of green onions on top. It's the dish everyone crowds around at a party, restaurant-style but ridiculously simple to make, and it disappears faster than you can say "second batch."
Ingredients
1 lb breakfast sausage, cooked and drained
1 (15 oz) jar Mateo's Queso Blanco
4 oz cream cheese (half of an 8 oz block), softened
2 tsp. salsa
Optional: 2–4 tablespoons milk if needed for thinning
2-3 green onions, chopped
Instructions
-
Brown and drain the sausage well.
-
In a large skillet over low heat, add the Mateo's Queso Blanco, cream cheese, and salsa.
-
Stir until the cream cheese is fully melted and incorporated.
-
Add the cooked sausage and stir to combine.
-
If you'd like it slightly thinner (more restaurant-style queso consistency), add milk 1 tablespoon at a time until you reach the texture you want.
-
Transfer to serving dish and top with green onions.
-
Serve immediately with tortilla chips
