Creamy Sausage and Queso Blanco Dip

Some dips ask you to babysit them; this one just asks for a bag of chips. Built on a jar of Mateo's Queso Blanco, it comes together in about 20 minutes — savory breakfast sausage browned and folded into melty queso and cream cheese, with a spoonful of salsa for depth and a scatter of green onions on top. It's the dish everyone crowds around at a party, restaurant-style but ridiculously simple to make, and it disappears faster than you can say "second batch."

Ingredients

1 lb breakfast sausage, cooked and drained

1 (15 oz) jar Mateo's Queso Blanco

4 oz cream cheese (half of an 8 oz block), softened

2 tsp. salsa

Optional: 2–4 tablespoons milk if needed for thinning

2-3 green onions, chopped

Instructions

  1. Brown and drain the sausage well.

  2. In a large skillet over low heat, add the Mateo's Queso Blanco, cream cheese, and salsa.

  3. Stir until the cream cheese is fully melted and incorporated.

  4. Add the cooked sausage and stir to combine.

  5. If you'd like it slightly thinner (more restaurant-style queso consistency), add milk 1 tablespoon at a time until you reach the texture you want.

  6. Transfer to serving dish and top with green onions.

  7. Serve immediately with tortilla chips
