Juicy shrimp that’s perfectly seasoned with taco spices, served over fluffy rice and topped with crisp, fresh produce. Bursting with flavor and vibrant colors, this is a dinner you’ll want to make on repeat.

Ingredients

1 lb. Cooked Shrimp (poached, grilled, pan fried, etc.)

2 tbsp. Olive Oil

1 Mateo’s Medium Taco Seasoning Packet

1.5 cups White Rice

3 cups Chicken Stock

1/2 cup Mateo’s Medium Salsa

1/4 cup Sour Cream

1 cup Shelled Edamame

1 tbsp. Cilantro

1 Cucumber, sliced

1 Bell Pepper, sliced

1 Avocado, sliced

1/4 Red Onion, sliced thin

1 Lime, cut into wedges

Sesame Seeds, optional for garnish

4 Flour Tortillas, grilled for serving

Instructions

  1. Cook shrimp according to personal preference. Allow the shrimp to cool slightly and add to a large sealable bag with olive oil and taco seasoning. Seal and set in the fridge to marinate while you prep the rest of the meal. 

  2. Cook rice according to package directions but instead of water use chicken stock. Set aside. 

  3. Mix together the Mateo’s Salsa and sour cream. Set aside. 

  4. When you’re ready to assemble, layer each bowl with desired amount of rice, edamame, cilantro, cucumber, bell peppers, avocado, and red onion. Garnish with lime wedges, sesame seeds and drizzle with the salsa sour cream. Serve with flour tortillas, if desired.
