These fully loaded nachos don’t hold back. Savory ground beef + beans, creamy queso, fresh salsa, and melty, cheesy base to bring everything together with a crispy tortilla crunch. Add on all the fancy frills as a garnish and you’ve got yourself a flavor-packed bite that’s impossible to resist.
Ingredients

1 lb. Ground Beef
1/2 Yellow Onion, diced
Mateo’s Cantina Taco Seasoning
1/4 cup Mateo’s Medium Cantina Salsa
1/4 cup Mateo’s Mild Queso Blanco
1 can Refried Beans
16 oz. Tortilla Chips
8 oz. Cheddar, shredded
8 oz. Monterrey Jack, shredded

Instructions

Brown the ground beef and yellow onion in a large skillet over medium-high heat. Once cooked, drain if necessary.

Stir in the taco seasoning with 1/4 cup of water. Then add the salsa and queso blanco. Stir to combine. Next add the refried beans and continue to stir until heated through. Once piping hot, turn off the heat and cover with a lid.

Pour the tortilla chips onto a large baking sheet lined with parchment paper. Add cheddar and Monterey Jack cheeses, then bake at 375F for 8 - 10 minutes, or until the cheese has melted.

Top the cheesy chips with dollops of the taco seasoned beef-bean mixture. Then drizzle with queso, dollop with salsa, sour cream, guacamole, green onions, then add optional jalapeño slices and lime wedges. Serve immediately.
